In Conversation With Debbie’s Kitchen | Indie Eats
Mallika Debbie Khan, Executive Chef of Debbie’s, started baking at the age of eight and never looked back since. Her passion and culinary journeys through Parisian cafes, eateries around the world, shaped her career.
After working at Michelin star restaurants like L’escargot and The Orrery, Mallika decided to start her very own kitchen here in Mumbai. And just like that, Malika, along with her best friend Mitu Sadarangani, started Debbie’s in April 2018. This duo operates out of a kitchen on Altamount Road. From scrumptious cakes, to healthy treats- Debbie’s Kitchen has it all under one roof!
We got to chatting with Mallika and learnt a little bit more about the brand.
How did Debbie’s come into existence?
It all started when one day my best friend Mitu asked me to bake her Magnolia ‘like’ cupcakes. She almost believed that they were from the bakery itself. This excited and inspired us to form Debbie’s.
Tell us about your experience at Le Cordon Bleu, and your work experience in the kitchen of Marco Pierre White.
Professional kitchens are the most fascinating places. The organised chaos is what I live for. It’s having to constantly give your best, regardless of what else is happening around you. It’s also extremely instantly gratifying. There’s a certain magic involved in baking, you take normal everyday produce, whisk, paddle, whip, fold, bake, repeat. And poof you get a cake! This exhilarating experience, and everything I learned in the kitchen, gave us the confidence to launch Debbie’s.
A lot of your dishes are inspired by your travels abroad. Do you think it’s important to travel in order to stand out in this industry?
Travel has fed my mind and soul and with that in mind I am better able to understand, appreciate and recreate food. Standing in line impatiently awaiting your freshly fried vada pav, that bowl of ramen or freshly baked desserts are part of the journey.
What does it feel like to be a home baker in Mumbai?
It’s always exciting and it gives me the liberty to innovate. It allows me to come up with new products each season using fresh fruits and local ingredients.
Tell us more about your vegan and healthy dessert options.
With the increased awareness and change in preference for vegan food, we want to make sure we can cater for the same. Our vegan cookies stand out in taste and texture as they are made with coconut oil while retaining the flavor of a wholesome cookie. Our aim is to continue to add healthier options to our menu as we grow.
We noticed that you sell sablé in your menu. Is this something that you grasped from your travels to France?
Yes, sable is one of our favorites! As its made with all the love of butter, flour and sugar. Sable in French translates to “sand” and refers to the texture of the biscuit that you experience as soon as you bite into it as it crumbles and melts to give you the additional ingredients and flavors added to it.
What is your personal favourite dessert in the menu?
That’s always a difficult question to answer, however if I had to choose, I would definitely recommend the brownie berry cheesecake since it has a myriad of scrumptious flavors.
Your menu says that you use all natural ingredients. Do you use local produce?
We strongly believe in the importance to support local farmers and small boutique vendors. That said, we use seasonal and locally sourced natural ingredients made in India.
How does it feel to be young entrepreneurs and to start a business with your best friend?
Our strengths and weaknesses complement each other and come together to form a glorious kaleidoscope of interlocking ideas. There is a sense of comfort that is based on years of us knowing each other, strengthened and bonded through our many adventures together. We also connect on the same level when it comes to food and the balance of it. All this put together made us create Debbie’s.
What are your future plans for Debbie’s?
To be the first go-to dessert for every Mumbaikar so that every person can enjoy the love and passion that we put into our delicious bakes.
