Mama Z’s Home-Cooked Pies | Indie Eats
A home cook from Cuffe Parade, Mama Z (Zarine Davar) operates out of her own kitchen with the help of her two daughters. They started out with three dishes, and have added many more in the six months they’ve been operational. South Bombay swears by her Banoffee Pie, and we couldn’t help but agree!
We interviewed Mama Z, and here’s what she has to say about her journey so far.
Give us a broad overview of Mama Z’s. What made you start it?
Mama Z’s is home-cooked comfort food, just as your mother would make. I always loved to cook, and more importantly, feed others. I constantly read up recipes and experiment with new ideas and conjure new dishes. My daughters were the main recipients of these experiments and they were the ones who coerced me into starting Mama Z’s. All credit goes to them.
Are you self-taught or do you have professional or educational training?
I have had no training except for going to cookery classes by Villie Mehta when I was 14, and of course lessons by my mother. I did learn a lot there, but otherwise I am self-taught. My obsession with food is my teacher, and I just learnt from experience.
Did you have any links to the hospitality industry before Mama Z’s began?
None. I loved to feed people and that was my brand of hospitality.
Take us through the best and worst thing about running an upcoming food business.
The best thing is that your food is able to reach people who are not in your spectrum of acquaintances or friends. Second, spreading love and happiness to these unknown people through food.
The worst thing is the constant pressure of ensuring your product is of excellent quality, as I would never want to disappoint any customer!
What’s your favourite food to make? (Both, inside and outside of Mama Z’s)
I am basically a western food person. Ironically, I enjoy creating desserts the most, even though I don’t have a sweet tooth. Fruity desserts are my favourite.
Tell us about the strangest request you’ve ever received from a client!
No request has ever been strange so far! We have been lucky.
What sort of a space do you operate out of?
From my own kitchen – Mama Z’s kitchen.
Where do you get your ingredients from?
We try to source local produce. The brie is from The Spotted Cow Fromargerie, the Mascarpone is from Golokadairy. The chocolate, however, is from Belgium and the artichokes from a can.
What’s product defines Mama Z’s the most?
All! They are all created by me and are all a representation of who I am.
Towards who have you targeted Mama Z’s?
We haven’t targeted any particular type, but we’ve come to realize that the ones who love us the most are the younger gen who want to try something more exotic than they would make at home, but which is still comfort food.
What’s your favourite dish from the menu at Mama Z?
The Brie and Caramelised Onion Pie!
